Serves 6-8.3-4 lbs. young bear roast1/4 cup cooking oil1 garlic clove1 minced onion1/3 cup vinegar2 bay leaves1/3 cup water1 tbsp. lemon juice2 tbsp. sugar1/2 tsp. chili powder2 tbsp. dry mustard1/2 tsp. cayenne pepper1/4 tsp. pepper1/2 cup catsup2 tsp. salt1/4 cup soy saucePlace roast in a skillet and add cooking oil. Braise roast on all sides using high heat. Add remaining ingredients and simmer for 30 minutes. Place roast and sauce in an open pan and cook for 3-4 hours at 350 degrees. Baste often.
