SPINACH SOUFFLE

Fix-it And Enjoy-it Cookbook
by Phyllis Pellman Good

Makes 6-8 servings
Prep Time: 5-10 minutes
Baking Time: 60-75 minutes


Ingredients
• 4 Tbsp. flour
• 1/4 lb. Colby cheese, grated
• 1/4 lb. cheddar cheese, grated
• 1/2 stick (1/4 cup) butter, melted
• 1-lb. carton small-curd cottage cheese
• 3 eggs, beaten
• 1/4-1/2 tsp. salt
• 1/8 tsp. pepper
• 10-oz. pkg. chopped spinach, thawed and squeezed dry


Directions
1.
Blend together flour, cheeses, and butter in a large mixing bowl.

2. Stir in remaining ingredients.

3. Pour into a greased 2-qt. baking casserole.

4. Bake uncovered at 325° for 60-75 minutes, or until knife inserted in center comes out clean.
