QUINOA PUDDING

Enjoy this versatile pudding for breakfast, brunch, snack, or dessert. Yield: 4 servings (3/4 cup per serving)
Ingredients • 1 cup quinoa • 2 cups boiling water • 1/3 cup raisins or dried cherries • 1/2 cup unsweetened apple juice • 2 bananas • 1/3 teaspoon lemon rind, grated • 3/4 teaspoon lemon juice, freshly squeezed • 1 teaspoon vanilla • 1/2 teaspoon cinnamon
Directions Rinse quinoa in hot water and drain while waiting for water to boil. This is an important step since quinoa contains a phytochemical called saponin, which has a bitter taste if not well rinsed.
Add quinoa to boiling water, then reduce heat to medium-low. Boil quinoa for 10 minutes, then add raisins or dried cherries and boil for another 5 minutes.
While quinoa is cooking, put remaining ingredients in a blender or food processor and blend until smooth.
Add the blended ingredients into the quinoa and simmer for 5 more minutes, or until desired consistency is achieved.
