PINE NUT RICE DRESSING
Yield: Makes 6 servings.
Ingredients • 1/3 cup chopped onion • 1/3 cup chopped celery • 1 tablespoon butter or margarine • 3 cups cooked brown rice • 1/4 cup pine nuts, toasted • 1 tablespoon chopped fresh parsley • 3/4 teaspoon poultry seasoning • 1/4 teaspoon salt • 1/8 teaspoon ground black pepper • 1 cup chicken broth • 1 egg, beaten
Directions Cook onion and celery in butter until tender in small skillet over medium heat.
Combine with rice, nuts, parsley, poultry seasoning, salt, pepper, broth and egg in buttered 2-1/2-quart baking dish.
Bake at 350 degrees 25 to 30 minutes.
