KASHMIR RICE DRESSING
Yield: Makes 6 servings
Ingredients • 1 cup chopped onion • 1 clove garlic, minced • 2 tablespoons butter or margarine • 3 cups hot cooked rice • 1 teaspoon salt • 1 teaspoon ground ginger • 1 teaspoon chili powder • 1/4 teaspoon ground black pepper • 1/2 cup canned tomatoes, drained • 1/2 cup flaked coconut • 2/3 cup chopped cashew nuts, divided • 1 cup yogurt
Directions Cook onion and garlic in butter until tender.
Add rice, salt, ginger, chili powder, pepper, tomatoes, coconut and 1/3 cup nuts.
Toss lightly. Fold in yogurt. Heat through.
Top with remaining 1/3 cup nuts.
Serve with broiled chicken, roast turkey or white fish.
