GOLDEN LIGHT BANANA FLAN

Prep: 30 min.
Bake: 90 min.
Makes: 8-10 servings



1-1/2 cups sugar, divided
1/4 cup water
1 ripe BANANA, sliced into rounds
3 eggs
1 teaspoon vanilla extract
1/8 teaspoon nutmeg
3/4 cup canned light coconut milk
3/4 cup skim milk
1-1/2 cups mashed ripe BANANA


COMBINE 3/4 cup sugar and water in small saucepan. Caramelize to a golden syrupy consistency over medium heat. Pour caramel into a 10-inch deep pie pan, tipping to coat bottom and sides. Arrange sliced banana in single layer over caramel. In large bowl, beat remaining sugar with eggs, vanilla, nutmeg, coconut milk, skim milk and mashed banana until smooth and blended.

POUR into pie plate. Place in a water bath with 1-inch of water and bake at 325 degrees F for 1 1/2 hours or until knife instered in center comes out clean. Chill.

RUN a knife around edge of pan to loosen edges; invert onto serving plate.
