CHICKEN GUMBO, SKILLET
Yield: Makes 4 servings.
Ingredients • 2 5-ounce cans chunk white chicken • 1 cup chopped green peppers • 1 cup chopped onion • 1 14-1/2- to 16-ounce can tomatoes (2 cups) • 1 cup chicken broth • 1/8 teaspoon ground red pepper • 1 cup uncooked rice • 1/2 teaspoon gumbo file
Directions Combine chicken, peppers, onion, tomatoes, broth and red pepper in large skillet.
Bring to a boil. Cover and simmer 10 minutes.
Stir in rice.
Replace lid and simmer 20 minutes or until rice is tender.
Adjust seasonings, if necessary.
