CANDIED SWEET POTATOES

18 whole Sweet Potatoes
Water
                      
1 3/4 cups Brown Sugar
2  Tablespoons Apple -- grated
3/4  cup Triple Sec
6 Tablespoons Butter
Salt And Pepper -- to taste
Paprika -- to color


[1) Cook Sweet Potatoes Unpeeled in water until tender. 
Drain.....Peel.....Cut into Quarters

[2) Place Sweet Potatoes in buttered oven proof pan.....Sprinkle with Brown Sugar, Salt, Paprika, Apple, Tripple Sec ----- Dot with Butter

[3) Bake uncovered at 375°F for 20-30 minutes.
