APPLESAUCE BAKED BEANS

This yummy recipe is also high in fiber!
Makes 10 servings.

• 4 cups cooked beans (cooked according to bean package's instructions)
• 1 cup bean liquid
• 1/4 cup vinegar
• 3/4 cups molasses
• 1 cup unsweetened applesauce
• 6 ounces tomato paste
• 2 tsp. dry mustard
• 1/2 tsp. cloves
• 1 onion, sliced
• 2 ounces Canadian bacon, cooked
• salt and pepper to taste
• cooking spray


Preheat oven to 325 degrees F.

Spray a 9-inch square deep baking pan or bean pot with cooking spray.

Arrange sliced onions on bottom of pan.

Add beans.

Combine remaining ingredients and stir into beans.

Cook covered for 2-1/2 hours.

Remove lid and cook uncovered for 30 minutes or until browned on top.

Nutrient analysis per serving:
Calories, 198; fat, 1 gram; fiber, 7 g; cholesterol 5 mg; sodium, 200 mg.
