BORAGE

Borage

Borage (Borago officinalis) is a large herb with hairy stems and leaves.

The whole plant has a cucumber odor and flavor.

Both the flowers and leaves are used in salads, but the hairy leaves must be finely chopped.

Use the young leaves in green salads, seafood salads, fruit salads and even fruit drinks.

The leaves may also be cooked and served as for spinach.

Always use young leaves as they become more prickly with age.*

The flowers may also be used in salads or candied and used to decorate pastries and cakes.

* CAUTION: Mature borage leaves contain small amounts of liver-toxic alkaloids and should be used in moderation.
