HOT CHOCOLATE, SPICED

Preparation Time 10 minutes, plus standing
Cooking Time 5 minutes



Ingredients

• 1 quart plus 1/3 cup milk
• 1/4 cup packed light brown sugar
• 6 cardamom pods, crushed
• 6 cloves
• 1 cinnamon stick
• 1 star anise, lightly crushed
• 1/2 tsp. whole coriander seeds
• 1/2 tsp. ground nutmeg
• 1/4 tsp. red pepper flakes
• 3 tbsp. unsweetened cocoa powder
• 1/2 tsp. vanilla extract


Directions
1.
In a medium-sized saucepan, combine the milk, sugar, cardamom, cloves, cinnamon, star anise, coriander seeds, nutmeg, and red pepper flakes over medium heat until hot. Remove the pan from the heat, whisk in the cocoa, using a hand whisk, then let stand 20 minutes.

2. Strain the spiced milk into a clean saucepan and reheat until just boiling. Stir in the vanilla extract, then divide the chocolate drink equally between 4 cups.
