Asiago is a pungent, semi firm to hard Italian cheese, originally made from sheep's milk (now it is frequently made with cow's milk). Asiago is originates in the village of the same name in the Italian provence of Vicenza.
It is sometimes referred to as the poor man's Parmesan. Asiago has very little odor, with a rich piquant, nutty flavor and a fat content of about 25%.
