STRAWBERRY BREAD

"A co-worker gave me this recipe when she heard about all the strawberries I was getting from our little backyard patch," says contributor Mary Ann Weber.
Yields 1 loaf


Ingredients
• 1 cup / 250 ml flour
• 1/2 cup / 125 ml whole wheat flour
• 1 1/4 cups / 300 ml strawberries (mashed)
• 3/4 cup / 175 ml sugar
• 2/3 cup / 150 ml oil
• 2 eggs
• 2 teaspoons ground cinnamon
• 1/2 teaspoon salt
• 1/2 teaspoon baking soda


Directions
Mix together in a large bowl, stirring until just combined. Pour into greased 8-inch / 1.5-L loaf pan and bake in preheated oven at 350F / 180C until toothpick inserted in center comes out clean, 1 hour.

Summer variation: Replace strawberries with peeled, finely chopped  peaches, blueberries, or a combination.
