SMOKY CHIPOTLE-BLACK BEAN SOUP
Serves 4
2 cups cubed ham (about 3/4 pound) 2 cups purchased salsa 1 15-oz. can black beans, rinsed and drained 1 14 1/2-oz. can vegetable broth 1 tablespoon lime juice or lemon juice 1 minced garlic clove 1/2 teaspoon ground coriander 1/4 teaspoon chopped chipotle chile (smoked jalapeno) 3 tablespoons dry sherry
Cooking Directions In a large saucepan combine the ham, salsa, beans, vegetable broth, lime juice, garlic, coriander and chipotle.
Bring to a simmer; ower heat and cook, covered, for 20 minutes.
Stir in dry sherry.
To serve, ladle into soup bowls.
