POSOLE

This is an official 5 A Day recipe
Makes 8 servings.


1 package (32 oz.) frozen posole
2-1/2 quarts water or more
2 large onions, thinly sliced
4 whole garlic cloves, crushed
1 can (28 oz.) crushed tomatoes
1 lb. lean pork or beef
2 Tbsp. dried red chili
1 Tbsp. dried oregano


Cook posole in water in crock pot for several hours until corn pops.

Add remaining ingredients and allow to simmer slowly until meat is tender.

During cooking, continue to add more water to stew, if necessary and stir occasionally.


Nutritional Analysis Per Serving: Calories, 198; Fat, 4 g; Cholesterol, 36 mg; Fiber, 5g; Sodium, 430 mg; percent calories from fat, 16%.
