QUICK BEEF CASSEROLE
Tired? Busy? You don’t need hours to make healthy dishes. Try this one-skillet wonder.
Yield: 8 servings
1/2 lb lean ground beef 1 C onion, chopped 1 C celery, chopped 1 C green pepper, cubed 3 1/2 C tomatoes, diced 1/4 tsp salt 1/2 tsp black pepper 1/4 tsp paprika 1 C frozen peas 2 small carrots, diced 1 C uncooked rice 1 1/2 C water
1. In skillet, brown ground beef and drain off fat.
2. Add rest of ingredients. Mix well. Cover and cook over medium heat until boiling. Reduce to low heat and simmer for 35 minutes. Serve hot.
