LATKE
A crisp, fried Jewish potato pancake, with eggs, onion, matzo meal and seasonings. Usually served with applesauce and sour cream. They were supposedly served by the wives of the Maccabees to their husbands as they prepared to drive the ancient Syrians from their land. Latkes are eaten during Chanukah, the Feast of Lights, to commemorate the victory.
