LARD

Rendered and clarified hog fat. Lard is richer than many other fats, and makes superbly tender, flaky biscuits and pastries. The drawback is that 1 tablespoon contains 116 calories, 13 grams of fat and 12 Mg of cholesterol.

Leaf lard is lard made from fat around the hog’s kidneys.
