Chocolate Mousse #1

Servings: 12



20 Ounces Chocolate
4 Ounces Unsweetened Chocolate
1/2 Cup Expresso Coffee
1/2 Cup Triple Sec
1 Fluid Ounce Brandy
                      
4 Each Egg Yolks
                      
2 Cups Heavy cream
1/4 Cup Granulated Sugar
1 Pinch Salt
1/8  Teaspoon Lemon juice
                      
8 Each Egg Whites -- CHILLED
1 Pinch Salt


[1) Melt Chocolates, Coffee and Liquors together over water.   Cool to room temperature.

[2) Beat in Egg yolks by had, one at a time; hold aside when done.

[3) Whip Cream, adding Sugar, Salt & Lemon juice; Whip until stiff.  Refrigerate to chill.

[4) Whip Egg Whites and salt until STIFF.....CHILL.

[5) Fold Egg Whites into Whipped Cream GENTLY.   Stir 1/3 of this into Chocolate mixture Then put remaining Cream mix into Chocolate and continue to fold lightly

[6) Pipe into glasses from pastry bag.
