SWEET APPLE CAKE

Serves 12.

1/3 cup raisins
6 tablespoons hot water
1 2/3 cup flour
1 cup sugar
1 teaspoon cinnamon
1 tablespoon cocoa
1 teaspoon baking soda
1 1/2 cup chopped OHIO apples, any variety
1/2 cup applesauce
1/3 cup melted margarine
2 eggs
1/2 cup chopped walnuts, optional


Preheat oven to 350ºF. Soak raisins in hot water to soften.
Sift together dry ingredients.
In a large mixing bowl, combine raisins and water, chopped apples, applesauce, melted butter and eggs.
Add dry ingredients at three different times, mixing well after each addition.
Mix in nuts, if desired.
Pour batter into a 9x13-inch cake pan that has been sprayed with non-stick vegetable coating.
Bake for 45 minutes. Cool.
Top with a cream cheese or caramel frosting.
