Makes 4 servings.


• 2 cups summer squash, sliced
• olive oil cooking spray
• 1 cup minced onions
• 1/4 tsp. salt
• 1/4 tsp. pepper
• 1/2 cup chopped parsley


Wash and cut squash into slices. Spray saucepan with olive oil spray.

Add onions and sautè until golden brown.

Add squash and cook until tender, for about 10 minutes, stirring carefully to keep squash from sticking.

Sprinkle with chopped parsley and serve.
