SHRIMP COCKTAIL, HONEY DATIL

Yield: 6 servings.
 

INGREDIENTS

    · 1/2 cup Florida honey
    · 2 tablespoons paprika
    · 2 pounds large (16/20 count or larger) Florida shrimp, peeled and deveined
    · 1 tablespoon chopped Florida datil pepper (or other hot pepper)
    · 1 teaspoon salt
    · 2 cups diced (cut into 1-inch pieces) Florida honeydew melon
    · 2 cups diced (cut into 1-inch pieces) Florida mangoes
     

DIRECTIONS

Combine honey, paprika, pepper and salt in a large skillet.
Heat over medium-high heat.

Add shrimp. Simmer 4 to 5 minutes, stirring occasionally, or until shrimp are opaque throughout.

Remove shrimp from liquid and chill; reserve honey mixture.

Alternate shrimp with melons and mangoes on wooden skewers.

Place in a glass container and pour honey mixture over shrimp, melons and mangoes.

Refrigerate and serve cold.
