NUEVO SOUTHWESTERN CHUTNEY

Makes about 1 1/2 cups chutney.

1 11-oz can corn, drained or 1 1/3 cups frozen corn
1 medium tomato, seeded and chopped
1/4 cup chopped roasted red pepper
1/4 cup jalapeno jelly
1 tablespoon chopped red onion
1 teaspoon chopped chipotle chile in adobe sauce
1 tablespoon chopped fresh cilantro leaves
 

Cooking Directions
In medium microwave-safe bowl, stir together all ingredients except cilantro.

Microwave on HIGH (100%) for 4 minutes, stirring every minute.

Stir in cilantro; microwave on HIGH for 1 minute.

Serve with fully-cooked ham.
