Marinated Pork Chops With Roasted Apples, Squash, Potatoes & Red Onions

Serves 4

Ingredients

    • 1 tsp. ground cumin
    • 1 tsp. ground cinnamon
    • 1 tbsp. soy sauce
    • 2 tbsp. honey
    • 1 tbsp. lemon juice
    • 4 pork loin steaks
    • 2 tbsp. sunflower oil
    • 1 tbsp. balsamic vinegar
    • 2 red onions, cut into wedges
    • 2 cups seeded and cubed squash
    • 2 cups diced potatoes
    • 2 cups peeled, cored, and chopped apples
    • salt and freshly ground black pepper
     

Directions

Combine the cumin, cinnamon, soy sauce, honey, and lemon juice and season with black pepper. Pour the marinade over the pork steaks and turn to coat. Cover and let marinate in the refrigerator at least 1 hour.

Heat the oven to 400°F.

Whisk together the oil and vinegar.

Put the onions, squash, potatoes, and apples in a large baking dish and season well with salt and pepper. Pour the oil and vinegar mixture over the top and toss to coat. Bake in the hot oven about 30 minutes until the vegetables and apples are tender. About 15 minutes before the end of the cooking time, heat the broiler.

Put the pork steaks on the broiler rack and broil about 6 minutes on each side until just cooked through.

Serve with the roasted vegetables and apples.
