SPICY RICE AND PORK CHOPS

Serves 6.
 

INGREDIENTS

    · 1 tablespoon butter or margarine
    · 1/2 cup chopped onion
    · 1 cup chopped OHIO Jonagold
    or Law Rome apples
    · 1/2 cup chopped celery
    · 3 cups cooked long-grain rice
    · 1 tablespoon brown sugar
    · 1/4 teaspoon allspice
    · 1/2 cup golden raisins
    · 1/2 cup sliced almonds
    · 1/4 cup water
    · 6 boneless pork tenderloin chops
     

DIRECTIONS

In a large skillet, melt butter and saute onions, apples and celery.

Stir in rice, brown sugar, allspice, raisins and almonds and water.

Heat completely.

Grill or broil pork chops until internal thermometer reads 155ºF to 160ºF.

Place chops on platter and serve with rice.
