CHICKEN TETRAZZINI

Louisa Tetrazzini (1871-1940) was an Italian operatic soprano. Chicken Tetrazzini was created in her honor by an American chef in the early 20th century.
 

The following information was contributed by Andrea Niosi:

James Beard believes it [Chicken Tetrazzini] was created in San Francsico, as well as many others, but I find no documentation.
My research shows one of two scenarios:

1. Created by Chef Pavani at the Knickerbocker in NY around 1912 or

2. Created by Chef Arbogast at the Palace Hotel in SF, CA around 1908.
