CARAMELIZED BANANAS WITH CHOCOLATE LAVA SAUCE

Prep: 10 min.
Cook: 5 min.
Makes: 4 servings



Bananas:
- 2 ripe Bananas
- 2 tablespoons lemon juice
- 1 tablespoon butter
- 2 tablespoons sugar

Sauce:
- 1-1/2 ripe Bananas
- 1/4 cup lime juice
- 1/4 cup packed brown sugar
- 3 (1-ounce) squares semi-sweet chocolate, melted
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground cayenne pepper


PREPARE bananas: peel the bananas and cut them on the diagonal into 1/4-inch thick slices. Toss the slices with the lemon juice to keep them from discoloring.

MELT butter in large skillet. Turn the heat up to high, add the bananas and sprinkle them with the sugar. Cook, rotating the bananas, for about 2 minutes, or until they are lightly caramelized on both sides. Remove the pan from the heat.

PREPARE sauce: peel and coarsely chop the bananas. Place the bananas and all other remaining ingredients in a blender or food processor and blend until smooth. Transfer to medium size saucepan and cook on medium high heat just until heated and barely simmer. Do not let boil. Remove from heat.

PLACE caramelized bananas on individual serving dishes. Pour chocolate sauce over top of bananas.

GARNISH with fresh bananas and sprinkle with cinnamon.
