MUSTARD GREENS PESTO

Pesto with a plus: according to traditional Chinese medicine, greens cleanse and restore liver function; garlic boosts levels of detoxifying enzymes.
Yield: 4 to 6 servings
Preparation Time: 15 minutes


INGREDIENTS

• 6 cloves garlic
• 1 cup walnuts
• 2 cups (packed) fresh mustard greens, washed and dried
• 1/2 teaspoon kosher sea salt
• 3 tablespoons extra-virgin olive oil


DIRECTIONS

Place garlic in a food processor and mince.

Add walnuts, and process until finely ground.

Add mustard greens and salt, and process until a thick paste forms.

Slowly drizzle in olive oil, and process until smooth.

Swirl this tasty pesto into broth, spread on crusty whole-grain bread, or mix into whole wheat noodles or rice.


VARIATIONS

- Use cashews in place of walnuts, or combine 1/2 cup almonds and 1/2 cup unsalted peanuts instead of walnuts.
- Use sesame oil in place of olive oil.
- Add 1/2 teaspoon kelp powder for more trace minerals.
- Add a few drops hot pepper sauce for more bite.
