Yield: 4 servings


    1½ pounds prime cut Florida alligator meat
    1 cup tomato sauce
    1/2 cup chili sauce
    1/2 cup chopped snow peas
    1/2 cup finely chopped red bell pepper
    1/2 cup chopped yellow squash
    2 teaspoons ground thyme
    1 teaspoon marjoram
    1 teaspoon salt
    1 teaspoon hot pepper sauce
    1/2 cup vinegar
    2 tablespoons all-purpose flour
    1/2 cup chopped green onions
    cooked rice


Chop alligator meat into small pieces.

Combine alligator meat and next nine ingredients in a glass dish.

Cover and microwave on high for 6 minutes, stirring after 3 minutes.

Combine vinegar and flour; mix well.

Stir into alligator mixture.

Cover and microwave on high 4 additional minutes.

Remove dish from microwave, and stir in green onions. Serve with rice.

calories 255, calories from fat 27, total fat 3g, saturated fat .81g, cholesterol 82mg, total carbohydrate 21g, protein 39g.
