DURUM WHEAT

Durum wheat is a strain of hard wheat with a high gluten content that produces a strong, elastic dough, and is mainly used to make pasta.

The endosperm (the inner kernel) of durum wheat is called 'semolina' - ground semolina (flour) is used to make the best quality Italian pasta.  It has a rich yellow color.
