CUCUMBER SALAD WITH ORANGES & MINT

 

Recipe from Robin to the Rescue
Anything that comes together in one bowl is a winner in my book. This colorful salad boasts sweet oranges, tangy mint, and refreshing cucumber in a mild sherry vinegar dressing.
Total Time: 10 minutes
Prep time: 10 minutes
Serves 4


Ingredients

• 1 English (seedless) cucumber, sliced into 1/4-inch-thick rounds
• One 12-ounce can mandarin oranges, drained
• 1/4 cup fresh mint leaves, finely chopped
• 1 tablespoon sherry vinegar
• 2 teaspoons olive oil
• Salt and freshly ground black pepper to taste


Directions
In a large bowl, combine the cucumber, oranges, mint, vinegar, and oil.

Toss to combine.

Season with salt and pepper.

Make it a meal kit:  Prepare the salad and store in a sealable container or plastic bag for up to 3 days in the refrigerator.

Have it your way:  Instead of an English cucumber, substitute a regular cucumber. To remove the seeds from a regular cucumber, halve it lengthwise and use a small spoon to scoop them out. No cukes in the house or you're in the mood for a different flavor? Very thinly slice a fennel bulb—the flavors work incredibly well together.
