CRANBERRY ORANGE BEETS

Ingredients
~ 2 lbs. medium beets, peeled and quartered ~ ½ tsp. ground nutmeg ~ 1 cup cranberry juice ~ 1 tsp. orange peel, finely shredded, optional ~ 2 Tbsp. butter ~ 2 Tbsp. sugar ~ 4 tsp. cornstarch
Directions
1. Place beets in slow cooker. Sprinkle with nutmeg.
2. Add cranberry juice and orange peel. Dot with butter.
3. Cover. Cook on Low 6-7 hours, or on High 3-3½ hours.
4. In small bowl, combine sugar and cornstarch.
5. Remove ½ cup of cooking liquid and stir into cornstarch.
6. Stir mixture into slow cooker.
7. Cover. Cook on High 15-30 minutes.
