NOODLES

The word 'noodle' is from the German, ‘nudel’.  It is a generic name for all types of flat pasta, made with flour, eggs and water. The best noodles are made using just the egg yolks, as whole eggs produce a somewhat tougher dough.
 

Noodles are a type of pasta which have ribbon-like shapes and are generally made with eggs. In the U.S., pasta labeled “egg noodle” must contain 5.5 percent egg solids by weight.
