TOMATO AND ORANGE SOUP

Step One 1 Large Onions -- finely chopped 1 Large Potatoes -- finely chopped 1 Large Garlic Clove -- minced 2 Fluid Ounces Clarified Butter Step Two 2 Cups Tomatoes, Canned -- diced 1 1/2 Cups Chicken Stock 1/3 cup Orange Juice Zest of One Orange -- grated Step Three 1/3 quart Heavy Cream Sugar -- to taste Salt And Pepper -- to taste
[1) Saute Vegetables in STEP ONE on low heat until onions are translucent.
[2) Add ingredients of STEP TWO, and simmer for 30 minutes.
[3) Add Heavy Cream; and Salt, Pepper & sugar to taste.
[4) Return to a simmer, remove from heat and serve.
