TOMATO SOUP WITH FRESH BASIL

Servings: 8   

Step One
1/2 cup Butter
1 cup Celery -- thinly sliced
1 cup Leeks -- thinly sliced
1/2 cup Shallots -- thinly sliced
                      
Step Two
6 Cups Whole Plum Tomatoes -- canned
8 Each Basil Leaves -- chopped
Salt And Pepper -- to taste


[1) Saute Celery, Leek and Shallots in butter until vegetables are softened.

[2) Add the Tomatoes, crushing them a bit with spoon

Stir in Basil and Salt & Pepper, simmer for 15 minutes.
