Step One1/2 cup Butter1 cup Celery -- thinly sliced1 cup Leeks -- thinly sliced1/2 cup Shallots -- thinly sliced Step Two6 Cups Whole Plum Tomatoes -- canned8 Each Basil Leaves -- choppedSalt And Pepper -- to taste[1) Saute Celery, Leek and Shallots in butter until vegetables are softened.[2) Add the Tomatoes, crushing them a bit with spoonStir in Basil and Salt & Pepper, simmer for 15 minutes.
