Evaporated Milk

Evaporated milk is fresh homogenized milk with 60% of its water removed by evaporation. It contains 7.9% milk fat.

Evaporated milk is not the same as “sweetened condensed milk” and should not be substituted in recipes.

Evaporated milk whips to three times its volume.
Chill 12 hours in freezer till ice crystals form.
Add 3 Tablespoons lemon juice for each 13 oz can.
Whip until stiff.
