ZEDOARY

Zedoary is an aromatic plant native to northern India, related to turmeric. Its large fleshy rhizome is gingerlike in flavor, with a musky aroma, reminiscent of rosemary. It is used in cooking as a spice; in bitters, liqueurs, and soft drinks. The dried rhizome is also used to produce a starch, Indian Arrowroot. The young shoots and flower clusters are also used in cooking in southern Asia.
