YEAST

Yeasts are single celled fungi, with hundreds of known species. Yeasts have been used for thousands of years in fermentation and leavening processes - converting sugars and starches into alcohol and carbon dioxide.

In 1866 Charles Fleischmann and his brother Maximilian founded the first compressed yeast factory in the United States.

The first commercial compressed yeast was manufactured by German bakers in 1825.

There are over 50 genera of yeast, with 678 species and thousands of different strains.

Yeasts are used in baking, brewing and in making wine and alcoholic spirits.
