ASIAGO CHEESE

Asiago is a pungent, semi firm to hard Italian cheese, originally made from sheep's milk (now it is frequently made with cow's milk).  It is sometimes referred to as the poor man's Parmesan. Asiago has very little odor, with a rich piquant, nutty flavor.
