CHEDDAR OVEN OMELET

Makes 2 servings

Ingredients
• 4 large eggs
• 2 tablespoons milk
• 1/8 teaspoon salt
• Pinch ground black pepper
• 1/4 cup diced jarred roasted red peppers
• 2 tablespoons chopped green onions
• 1 cup grated Cabot Sharp, Extra Sharp or Seriously Sharp Cheddar, divided


Directions
1.
Place rack in middle of oven and preheat oven to 400ºF. Coat pie plate or small shallow baking dish with nonstick cooking spray or brush with oil.

2. In small bowl, whisk eggs until combined and frothy. Add milk, salt and pepper and whisk again. Stir in peppers, green onions and 3/4 cup of cheese.

3. Pour mixture into prepared pie plate, distributing evenly. Bake for 12 to 15 minutes, or until puffed and set all the way to center. Remove from oven and sprinkle with remaining 1/4 cup cheese.
