ICED BOX APPLE PIE

Serves 8.

TOPPING:
1/4 cup graham crackers
1 tablespoon butter or margarine, melted
1 1/2 teaspoon sugar
4 1/2 cups sliced and peeled OHIO apples
1 1/2 cups water
1 tablespoon butter or margarine
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 3-ounce package peach flavored gelatin
1 3-ounce package cook and serve vanilla pudding mix
9-inch prepared crust, baked


Combine topping ingredients and set aside.

In a large saucepan, combine apples, water, butter, cinnamon and nutmeg.

Bring to a boil, reduce heat and simmer, uncovered, for 10 minutes, or until apples are tender.

Gradually stir in gelatin and pudding mix.

Bring to a boil, stirring constantly.

Remove from heat and let stand 5 minutes.

Pour into pie shell and sprinkle topping over filling.

Chill 3-4 hours or until firm.
