TRIPLE ESPRESSO BROWNIES

BROWNIES

• 1 box (19.5 oz) Pillsbury® traditional fudge brownie mix
• 1/2 cup vegetable oil
• 1/4 cup water
• 2 eggs
• 2 teaspoons instant espresso coffee granules
• 1 teaspoon vanilla

FILLING
• 1/4 cup butter or margarine, softened
• 1/2 cup packed brown sugar
• 1 egg
• 2 teaspoons instant espresso coffee granules
• 1 teaspoon vanilla
• 1 cup coarsely chopped walnuts
• 2 bars (5 oz each) sweet dark baking chocolate
OR 1 bar (9.7 oz) semisweet dark baking chocolate, chopped

GLAZE
• 1/2 cup semisweet chocolate chips
• 1 tablespoon butter or margarine
• 1/8 teaspoon instant espresso coffee granules
• 1 to 2 teaspoons milk or whipping cream


Directions
1.
Heat oven to 350°F. Grease bottom only of 13 X 9-inch pan with shortening or cooking spray. In large bowl, beat all brownie ingredients 50 strokes with spoon. Spread in pan. Bake 28 minutes. Remove from oven.

2. Meanwhile, in small bowl, beat 1/4 cup butter and the brown sugar with electric mixer on medium speed until light and Huffy. Add 1 egg, 2 teaspoons coffee granules and 1 teaspoon vanilla; beat until well blended. In medium bowl, mix walnuts and chopped chocolate. With spoon, stir in brown sugar mixture until well blended.

3. Spoon and carefully spread filling over baked brownies. Bake 17 to 20 minutes longer or until light brown.

4. In 1-quart saucepan, melt chocolate chips and 1 tablespoon butter over low heat, stirring constantly, until smooth. Remove from heat. With wire whisk, stir in 1/8 teaspoon coffee granules and enough milk for desired drizzling consistency. Drizzle over warm brownies. Cool completely, about 45 minutes. For brownies, cut into 8 rows by 6 rows.

High Altitude (3500-6500 ft): Add 1/2 cup all-purpose flour to dry brownie mix. Increase water to 1/3 cup.
