GRILLED ZUCCHINI
Serves 4
1 pound zucchini 2 tablespoons olive oil 1 teaspoon oregano Ground black pepper to taste 2 tablespoons lime juice Salt to taste
Cooking Directions Slice zucchini in half lengthwise; rub with olive oil, sprinkle with oregano and pepper.
Grill directly over medium hot coals, cut side down, until well browned.
Sprinkle with lime juice and season with salt.
