SWEET POTATO FRUIT COMPOTE

Fix-It And Forget-It Big Cookbook

Makes: 8 Servings
Prep Time: 20 Minutes
Cooking Time: 5-6 Hours
Ideal Slow Cooker Size: 3½-Quart
 

Ingredients

~ 4 cups sweet potatoes, peeled & cubed
~ 3 tart cooking apples, peeled & diced
~ 20-oz. can unsweetened pineapple chunks, undrained
~ ¼ cup brown sugar
~ 1 cup miniature marshmallows, divided


Directions

1. Cook sweet potatoes in a small amount of water in a saucepan until almost soft. Drain.

2. Combine sweet potatoes, apples, and pineapples in slow cooker.

3. Sprinkle with brown sugar and 2/3 cup marshmallows.

4. Cover. Cook on Low 5-6 hours.

5. Thirty minutes before serving, top potatoes and fruit with remaining 1/3 cup marshmallows. Cover and continue cooking.
