YELLOW SQUASH CASSEROLE
Yield: 6 servings
Ingredients • 3 cups squash • 1 medium onion, chopped • 1/2 cup mayonnaise • 1 egg, beaten • 1/2 package Ranch salad dressing mix • 1 teaspoon salt • 1 cup sharp Cheddar cheese, grated • 1 cup cheese crackers, crushed
Directions Boil squash and onion together, then drain.
Add remaining ingredients and mix.
Place in a baking dish sprayed with non-stick spray.
Bake at 350 degrees F for 25 minutes.
Top with crackers and bake an additional 5 minutes.
