SHRIMP IN SALSA VERDE

 

Recipe from Robin to the Rescue
Salsa verde is a green salsa made from serrano chiles, green tomatoes, cilantro, and lime juice and wonderful with seafood. If you can't find green tomatoes, you may use husked tomatillos or regular, ripe red tomatoes.
Total Time: 13 minutes
Prep time: 10 minutes
Active cooking time: 3 minutes
Serves 4


SALSA VERDE

• 2 large green tomatoes
• 1 fresh serrano orjalapeno chile pepper, seeded and minced
• 2 tablespoons chopped fresh cilantro
• 2 tablespoons fresh lime juice
• Salt and freshly ground black pepper to taste

• 2 teaspoons olive oil
• 1 1/2 pounds large shrimp, peeled and deveined
• 1/4 cup chopped scallions (white and green parts)


Directions
1.
In a large bowl, combine the salsa ingredients. Set aside.

2. Heat the oil in a large skillet over medium heat. Add the shrimp and cook until opaque and just cooked through, about 3 minutes.

3. Spoon the salsa verde onto a serving platter and top with the shrimp. Sprinkle the scallions over the top and serve.

Make it a meal kit: Make the Salsa Verde and store in a sealable container or plastic bag for up to 3 days in the refrigerator.

Morph it: Make a double batch of the Salsa Verde and serve it with corn chips, toasted pita wedges, and/or a fresh cheese platter. It's also terrific spooned over chicken or fish.
Or, double the entire recipe and morph the extra into Shrimp Tacos by serving the shrimp in flour tortillas and spooning the salsa over the top; serve with sour cream and guacamole on the side.
