Fix-it And Enjoy-it Cookbook

Makes 12 servings
Prep Time: 20 minutes
Baking Time: 45 minutes

• 1 stick (1/2 cup) butter, softened
• 1/2 cup oil
• 1 3/4 cups sugar
• 2 eggs
• 1/2 cup buttermilk
• 1 tsp. vanilla
• 1 tsp. salt
• 1 tsp. baking soda
• 2 1/2 cups flour
• 4 tbsp. unsweetened cocoa powder
• 2 cups grated zucchini, peeled or unpeeled
• 1 cup chocolate chips

In a large mixing bowl, cream butter, oil, and sugar together.

2. Beat in eggs.

3. Add milk, vanilla, and salt.

4. In a separate bowl, sift together baking soda, flour, and cocoa powder. Stir into creamed mixture.

5. Gently stir in zucchini.

6. Grease a 9 x 13 baking pan. Sprinkle flour lightly over its bottom and sides. Pour in batter. Sprinkle with chocolate chips.

7. Bake at 325° for 45 minutes.
