PEAR RICE PUDDING

Makes 6 servings. 

1 bag  Success® rice
1  16-ounce can lightly sweetened Bartlett pears in juice, well drained and sliced lengthwise
1/4 cup  maple syrup
1/2 tsp  vanilla extract
1 tsp  finely grated lemon zest
3  large eggs
1 1/2 cups whole milk
1/3 cup  granulated sugar
1/4 tsp  salt


Preheat oven to 350 degrees F.

Prepare rice according to package directions.

Mix cooked rice, pears, maple syrup, vanilla and lemon zest in one bowl.

In another bowl, beat together eggs, milk, sugar and salt.

Pour egg mixture into a buttered 8" x 8" or 9" x 9" dish.

Bake for 45-50 minutes or until pudding is firm and lightly browned.

Serve pudding slightly warm or at room temperature with whipped cream.
