BEAN THREAD SOUP

Thai Cooking in a Sufi's Kitchen

A low-fat diet soup. Very easy to prepare. Only a few ingredients make a very delightful bowl of soup.
4 servings

INGREDIENTS:

• 1/4 pound bean threads soaked in cold water until soft
• 8 cups clear chicken broth
• 2 tablespoons light soy sauce
• 1/2 cup fresh sliced mushroom
• 2 green onions, cut into sections (optional)

• 1/2 cup boneless ground chicken or lean ground pork, seasoned with
· · 1 teaspoon sesame oil
· · 1 teaspoon fish sauce
· · and 1/4 teaspoon black pepper
 

METHOD:

1. Cut bean threads into 5-inch long sections.

2. In a small saucepan, add two cups water, bring to a boil over high heat.

3. Add the seasoned chicken or pork, as desired, to the boiling water. Stir until the meat is cooked. Remove from heat. Rest the meat in a strainer. Discard the water.

4. In a large saucepan, add chicken broth to the saucepan. Bring the broth to a boil over high heat. Add mushrooms, bean threads, and meat. Vegetarians, leave out the meat. Bring the food mixture to a boil. Add light soy sauce to taste.

5. Add green onions and black pepper. Remove from heat. Serve at once.

Note: If you want this soup to be the whole meal for lunch, just add more bean threads to the soup during cooking, or serve with steamed rice.
