WALNUT AND MINT-CRUSTED SALMON

Serves 6

6 6oz salmon fillets

WALNUT-MINT PESTO
½ cup chopped toasted walnuts
1.4 cup packed fresh mint leaves
1 clove of garlic, peeled
2 tbsp extra virgin olive oil
2 tbsp lemon juice
Salt and pepper to taste


Combine walnuts, mint, garlic and oil in food processor and process until fine.
Stir in lemon juice and season to taste.

Place salmon fillets skin side down on foil-lined baking sheet.
Spread tops and sides with pesto.
Cover and refrigerate for up to four hours.

Preheat oven to 425 F

Roast salmon for 10- 15 minutes depending on thickness, or until fish is slightly pink in the centre. Using a large metal spatula, carefully transfer salmon to serving plate.

Garnish with walnut halves and mint

Serve with boiled, dill flavoured potatoes and sautéed seasonal vegetables.
